Lemon 'Cheese' Cake [no bake. raw. vegan.] July 09 2017


No Bake Dairy Free Gluten Free                                           Lemon Cheesecake Recipe

What you will need:


  • 3/4 cup of Dry Raw Organic Almonds
  • 1 tbsp of Organic Shredded Coconut
  • 1/2 cup of Organic Pitted Dates
  • Dash of Pink Himalyan Salt
  • 1 tsp Organic vanilla powder (or Extract)
  • 2 tbsp Organic Coconut Oil

Lemon Filling:

  • 1 cup Soaked Raw Cashews
  • 1/3 cup Lemond Juice from Fresh Organic Lemons
  • Zest of Half an Organic Lemon
  • 1/2 cup Organic Mayple Syrup
  • 1 tsp Organic Vanilla Powder (or Extract)
  • 1/4 cup Melted Organic Coconut Oil
  • Dash Pink Himalyan Salt



  • Food Processor
  • High Speed Blender
  • Dehydrator (optional)
  • 6 inch Springform pan

Prepping your Nuts:

Step 1: Soak Your Nuts 😉 Soak your almonds an cashews over night. This removes the phytic acid and makes them more digestible.

Step 2: Sprout Optional* Personally I always sprout all my nuts to maximize the nutrition benefit. Click this link to find out how to sprout beans, seeds and nuts.

Step 3: Dry Almonds  I dry the almonds in a foody dehydrator after.

Making the Crust

Step 4: Mix All Your Dry Ingredients In a Food Processor  In a food processor mix nuts until finely ground. Add the rest of the ingredients and mix together.

Step 5: Place into 6 inch Springform Pan. Press down to form crust.

Step 6: Place into Refigerator while you make the filling

Making the Filling

Step 7: Blend all Filling Ingredents In a blender, I use a vitamix, puree the filling ingredients into a creamy consistancy.

Step 8: Pour over the Crust Pour the filling over the crust in the springform pan.

Step 9: Place in Refigerator Place the springform pan into the refrigerator for a few hours or over night until it sets and hardens.

Step 10: Take out of Springform Pan

Step 11: Decorate! This is totaly up to you. I decorated mine with fresh organic straw berries and blue berries.
